This is a very yummy recipe that we made as a group at MOPS.  It was fun to do too, everyone brought in a casserole dish to take this home in and we froze it.


3-4 cups ziti, 1lb chicken breast, 1c shredded mozzarella cheese, 1 jar spaghetti sauce, 1/2c bread crumbs


Cut the chicken breast into bite size pieces and saute with garlic and butter. Fill a pot with water and boil the noodles. Drain pasta and set aside.

Get your casserole dish, add chicken, pasta and cheese. Stir together.  Add spaghetti sauce sprinkle with bread crumbs. Cover the dish with foil and freeze.

When you want to eat your casserole, defrost it over night in the refrigerator. Bake at 350 degrees about 35 minutes.

I think I am going to make this for dinner tonight and substitute some of the chicken nuggets I have for the chicken.  I’ll just dice them and add them in, I am pretty sure it will be ok.

Well yesterday I finally found time for the potatoes.  I managed two huge cookie sheets of twiced baked potatoes.  I cleaned them, stabbed with a fork and cooked them for an hour in the oven at 350 degrees.  Then I cut them in half, scoop out the insides (going as close to the edge as I can) mix that with butter and sour cream.  Scoop back into the potatoe and top with cheese then flash freeze in the freezer.

I still have 15 lbs of potatoes to do something with. Mom was over and suggested I try to make some potatoe soup so maybe I will, but french fries are also on my list to so.

I bought 2.5 dozen eggs the other day so eventually I’ll get to the waffles too.  I’ll link that recipe when I do because those Whole wheat waffles were wonderful.

Since I have been so busy cooking for the freezer, I thought I’d give you guys an idea of what other items I freeze too. I have had some ask me what all you can freeze so here is my list.

Butter (tubs or sticks)
Milk (I have frozen 1/2 gallons in carton of chocolate and regular)
Break and bake cookies (I freeze them just as they come)
Fruit (we were blessed with cantelopes so I cut them and froze them)
Chocolate chips
Crackers (all kinds)
Shredded cheese

I take things that are left over and freeze them. If we are at a cookout I will take the leftover buns and freeze them and use them later. If I have a handful of veggies leftover from dinner I freeze them to use in soups or casseroles for later.

Ok so I began this adventure on Monday, but I am not done so I keep plugging away when I can.  Today I have mastered 3 bags of meatballs, and one batch of hamburgers.  I still need to make twiced baked potatoes, fries and more waffles. I was at the store last night and forgot to pick up the sour cream needed for the potatoes and the eggs needed for the waffles.  Oh well. There is always tomorrow.


Well…for a long while I was searching for the recipe for the Wheat waffles I wanted to make.  I new I had read it on but couldn’t get the link to work.  My dear friend Kristi emailed me the link. 🙂 I only was able to make one batch because I didn’t plan.  I am almost out of milk and used all the eggs.  Oh well, there is always tomorrow. I have also NOT made any potatoes or fries, Frank broke the french fry cutter   😦 and I don’t have sour cream for the twice baked potatoes.

So recap of today:

3 Meatloafs

3 lbs of browned burger meat

1 batch of Whole Wheat waffles

1 bag of peeled and frozen bananas

20 breakfast burritos

Not too bad…

Well, it is lunch time.  I completed 3 meatloaves, 3lb of ground beef browned, and 20 breakfast burritos. Next up potatoes and waffles…here is the pics from the breakfast burritos. The whole time I was assembling them I had children at my feet begging for tacos.

 We got egg beaters on a really great deal and froze them, this is 2 packages of western flavor.

Brown sausage, I use different kinds of meat sometimes sausage, ham or bacon. This was also in the freezer Jimmy Dean maple flavor.

These are Walmart brand, they only cost $.92 for 16 flour tortillas…maybe someday I will make some myself but for now this is pretty cheap.

Assemble onto tortillas, this is cheese, eggs and sausage.

Fold them over and then I flipped mine onto Saran Wrap.

I then used the kitchen scissors to cut down the middle of Saran Wrap and wrapped them individually.

Here is one of my helpers…she was untying my shoes.

Here is the completed breakfast burritos, I store them in a sealed container in the freezer so they stay fresher.  Frank pulls out 1 or 2 and heats in microwave for a quick and super cheap breakfast. It cost $5.00 for all of the ingredients so when you divide that by 20 that is $.25 a burrito WAY cheaper than Mc D’s.


1.5lbs ground beef

1 c onions (I use 1/2c onion flakes)

1 c bread crumbs

1 c milk

1 egg

Mix with your hands all the above ingredients, smush them together very well. 

Place in a loaf pan and cover with the glaze. Cook for 1 hour at 350 degrees.


1/3 c ketchup

2 tbsp mustard

2 tbsp brown sugar

Stir together in a separate bowl and sit aside until meatloaf is in pan. Then cover with glaze.

I am a really messy chef, esp when I have 4 people standing behind me asking for things. 🙂 I cleaned up from the meatloaf mess and have already browned 3 lb of burger meat.

Now onto some breakfast burritos.
