Italian meatball soup

Posted on: February 9, 2010

While coupon shopping one day I bought Progresso’s Italian Style meatball soup.  It was awesome.  My hubby and I fell in love with it, we are NOT soup people. It is used as a last resort but we were wishing I had bought 2 cans of that soup.  I assessed the ingredients and figured out my own version.

Italian Style Meatball soup

1 box of chicken or beef broth

1 can tomato paste

2 c spaghetti sauce

1 package of Penne pasta

15-20 meatballs

Handful or so of cut carrots

Ok so I am a cook by sight/taste kind of person. Make the meatballs, if your making from scratch. Cook the pasta, drain and set aside. In a big pot or crockpot mix the broth, spaghetti sauce, and paste.  Cut the pasta in half so they are smaller penne.  Add pasta, and meatballs.  Cut the carrots into pieces or small chunks and add also.  Since all ingredients are cooked you can just set on low and eat when it is good and hot.  You also can add any spices that excite you, I added garlic pepper and Italian.
